Anyone who knows me knows I have a real sweet tooth; resisting the offer of chocolate is always difficult for me, so it’s always great to find quick and easy chocolate snacks that can be made very easily and really hit the spot when you want that chocolate fix. Plus it's the weekend, so after all your hard work Monday - Friday, you deserve it!
I love that they have natural, healthy ingredients, yet they taste so good, even kids will love them – and they only take 10mins to make, whats not to love!
Check out the recipe below and let me know what you think!
25g goji berries
25g pistachio nuts
6 medjool dates
80g desiccated coconut (plus extra for coating)
3 tbsp Cacao Powder
3 tbsp coconut oil
Pit the dates and put them in some water to soften for approx 15mins.
Blend all the ingredients together in food processor. Shape with your hands into round balls and coat each one with more desiccated coconut. Place in the fridge for at least 20mins so the balls can set. Then enjoy.
(Depending on the size, you should be able to make approx 20)
If you don't have a food processor, don't worry. I used a NutriNinja to blend my ingredients together, so after I blended them, I transferred to a bowl where I mixed them together with a wooden spoon, before shaping them.
